BEHOLD, The Feta!
have once again been introduced to the wonder and glory that is Danish feta in
aisle and looked at it, not being able to believe my luck. But, maybe to oil.
There it was, in “snack packs” for 49p at the local Lidl. I stood there in the

This time last year I worked for a man who at his best was a useless, yet
entertaining wanker and at his worst was petty, disorganized and incompetent. I
had days last February where I would go into work and then end up hiding in
some corner for 10 minutes at some point in my shift wanting to cry and trying to
talk myself out of quitting because I needed the money. On these days I would
end up at the supermarket with my list of veggies and lean meats and I would be
allowed one thing that wasn’t on the list. Now, most days, the one thing that
wasn’t on the list tended to be something that should have been on the list but
wasn’t. But, one day I found myself standing in the exotic cheese aisle,
absolutely battered and still wanting to cry when I saw it, the magic jar.
The magic jar was full of Danish feta and herbs mixed in olive oil. It looked
amazing. I decided it would be my own thing off of the list. I had to take it home.
Then, I realized it was 7 bucks a jar. The thought of being that close to
something made my technician very close to god and not being able to take it
home made me want to absolutely weep. And, in public. I walked around the
store and picked up the things I needed. I thought once more about the feta. I
wandered down the chocolate aisle to see if anything else struck my fancy.
Then, I decided to throw caution to the wind and spend 7 bucks on a jar of
cheese. You only live once, right?
Well, if you’ve never had Danish feta, it is magical. It is made of cow’s milk. It is
salty and dry (even though its been soaking in olive oil) and crumbly. It takes on
the nice herby flavor of whatever else is in the jar with it. (Then, there is the
added bonus of getting to use the leftover oil in vinaigrette. This is doubly nice
because there are still little crumbles of feta to be had and thus you aren’t
wasting a thing.)
This afternoon I had a spinach salad with feta and egg. It was amazing. I bought
some random veggies today. Some peppers, tomatoes, celery. I’m going to
chop them up I think and mix them with a little bacon and let them sit overnight
tonight in a vinaigrette with the feta. THE FETA! I’m so very excited about it. I’ll
let you know how it turns out.
